About the Owners

Falafel al Jailawi is a catering and food truck business owned and operated by Chef Max al Jailawi. In Utah since 2014, Chef Max offers a variety of traditional Iraqi food and some American standards. Dishes include falafel, shawarma, gyros and hummus alongside Philly cheesesteak, cheeseburgers and fries.

Food has played an integral role in Max’s upbringing. Since they were 9 years old, Max remembers helping make food for family gatherings and, in later years, getting inspiration from YouTube videos to make delicious food as a hobby. Now that hobby has turned into a career in the food business. 

This food truck collaboration at Shades is part of a new  partnership with Spice Kitchen Incubator by Rescue.org. It's not just about delicious global flavors; it's a celebration of new beginnings. Every dish is crafted by incredible refugees and immigrants, turning their dreams into delectable realities. So, when you grab a bite with us, you're not just enjoying a meal; you're supporting a journey.
